Chili and Cheese Quesadilla Recipe

  • 2 (15 ounce) cans HORMEL® Chili No Beans
  • 1 (16 ounce) can refried beans
  • 2 ripe tomatoes
  • 1 red onion
  • 1 bunch cilantro
  • 7 jalapeno peppers
  • 1 head garlic
  • 1 lime
  • 3 avocados
  • 1 (12 ounce) package MANNY'S® 8-inch Fajita Style Flour Tortillas
  • 1 pound medium Cheddar cheese
  • 1 (16 ounce) container sour cream
  • Salt
  1. To make the pico de gallo: Dice tomatoes, red onions, jalapeno peppers, garlic and cilantro. Add juice of one lime. To make the guacamole: Smash up avocados. Add some of the pico de gallo. Add salt to taste. Then take a tortilla, add a layer of refried beans, a layer of chili and a layer of cheese. Cover with an additional tortilla and heat in a frying pan. Once toasted, serve with sour cream, pico de gallo and guacamole on the side.
