- 3 teaspoons kosher salt
- 2 cups coarsely chopped white onion
- 4 cloves garlic, sliced
- 1 ounce jalapeno chile, stemmed, seeded, and coarsely chopped
- 1 (24 ounce) jar Safeway SELECT Medium Salsa Verde
- 1 cup chopped cilantro leaves
- Warm corn tortillas
- 1 firm-ripe avocado, chopped (optional)
- 2 firm-ripe tomatoes, cored, seeded, and chopped (optional)
- 2 1/2 pounds boneless pork country-style ribs or pork shoulder (also called pork butt), excess fat trimmed, cut into 4-inch pieces
- Combine pork, salt, onion, garlic, jalapeno, salsa verde, and 1 cup water in a slow-cooker set to High.
- Cook until pork is tender when pierced, about 4 to 5 hours. Skim any fat from surface, then remove meat from pot and coarsely shred. Return shredded meat to pot with sauce and stir in cilantro.
- Serve pork to spoon onto warm corn tortillas. Top with avocado and tomato (if desired) and wrap into a soft taco.
