Chicken Salad with Bacon and Tomatoes Recipe

  • 1 1/4 cups halved cherry tomatoes
  • 1 pinch salt
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 dash Worcestershire sauce
  • 6 slices bacon
  • 3 cups cooked, chopped chicken breast meat
  • 3 stalks celery, cut into small dice
  • 1 tablespoon finely chopped fresh parsley
  • 3 green onions, thinly sliced
  1. In a small bowl, sprinkle salt over halved cherry tomatoes; set aside. In another small bowl, mix mayonnaise, lemon juice, and Worcestershire sauce; set aside.
  2. Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
  3. In a large bowl, combine chicken, crumbled bacon, cherry tomatoes, celery, parsley, and green onions. Stir in mayonnaise mixture. Chill for 10 minutes before serving.
