- 1 tablespoon olive oil
- 4 ounces smoked sausage, cut into 1/2 inch slices
- 1 cup chopped onion
- 1/4 teaspoon salt
- 2 cloves garlic, minced
- 3 leeks (white part only), chopped
- 2 medium Granny Smith apples – peeled, cored and chopped
- 2 (6 ounce) boneless skinless chicken breast halves, cut into chunks
- 4 cups fat-free, reduced-sodium chicken broth
- 2 cups water
- Heat oil in stockpot on medium-high heat.
- Add sausage to pan; saute 3 minutes or until lightly browned. Add onion; saute 3 minutes. Add salt and garlic; saute 1 minute. Add leek and apple; saute 8 minutes. Add chicken; saute 4 minutes, browning on all sides.
- Stir in broth and water; bring to a boil.
- Reduce heat and simmer 10 minutes, stirring frequently.
