Chicken, Apple, and Leek Soup Recipe

  • 1 tablespoon olive oil
  • 4 ounces smoked sausage, cut into 1/2 inch slices
  • 1 cup chopped onion
  • 1/4 teaspoon salt
  • 2 cloves garlic, minced
  • 3 leeks (white part only), chopped
  • 2 medium Granny Smith apples – peeled, cored and chopped
  • 2 (6 ounce) boneless skinless chicken breast halves, cut into chunks
  • 4 cups fat-free, reduced-sodium chicken broth
  • 2 cups water
  1. Heat oil in stockpot on medium-high heat.
  2. Add sausage to pan; saute 3 minutes or until lightly browned. Add onion; saute 3 minutes. Add salt and garlic; saute 1 minute. Add leek and apple; saute 8 minutes. Add chicken; saute 4 minutes, browning on all sides.
  3. Stir in broth and water; bring to a boil.
  4. Reduce heat and simmer 10 minutes, stirring frequently.
