Chicken and Vegetable Ragout with Natural Whole Grain Brown Rice Recipe

  • 1 cup UNCLE BEN'S Natural Whole Grain Brown Rice (30-minute cook)
  • Nonstick cooking spray
  • 1 pound chicken tenders
  • 4 cloves garlic, sliced
  • 1 cup green beans
  • 1 cup zucchini slices
  • 1 cup sliced mushrooms
  • 1 1/2 teaspoons fresh basil leaves, chopped
  • 3/4 teaspoon fresh thyme leaves
  • 2 tomatoes, sliced into 8 pieces each
  1. Cook rice according to package instructions.
  2. Apply coating spray to large non-stick skillet. Add chicken and cook 2-3 minutes each side or until cooked through. Remove from skillet and set aside.
  3. Add garlic, green beans, zucchini and cook for 2-3 minutes. Add mushrooms, herbs and cook two minutes more. Add tomatoes and cook until heated through.
  4. Pour ragout over chicken and serve with rice.
