Cheesy roast potatoes Recipe

  • butter, for greasing
  • 200g/7oz potatoes, quartered
  • 2 tbsp olive oil
  • 1 sprig fresh rosemary
  • 1 garlic clove, crushed
  • salt and freshly ground black pepper
  • 100g/3½oz Red Leicester, grated
  1. Preheat the oven to 200C/400F/Gas 6.
  2. Lightly grease a gratin dish with the butter and add the potatoes, olive oil, fresh rosemary and crushed garlic. Season with salt and freshly ground black pepper and mix well.
  3. Roast the potatoes in the oven for 15 minutes or until golden and cooked through.
  4. Add the grated cheese for the final three minutes of the cooking time. Serve hot.
