Cheese and Spinach Pie Recipe

  • 1 (11 ounce) package refrigerated soft breadsticks
  • 4 egg whites
  • 1 cup evaporated fat-free milk
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon Italian seasoning
  • 2 cups Kellogg's Special K®, crushed
  • 1 cup cooked brown rice
  • 1 cup chopped seeded tomatoes
  • 1 (10 ounce) package frozen chopped spinach, thawed, thoroughly drained
  • 1/4 cup sliced green onions
  • 1/2 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese
  1. Arrange dough in circle on lightly floured surface. Let rest 10 minutes. With rolling pin, flatten dough into 12-inch circle, sealing all holes. Place in 10-inch pie plate coated with cooking spray. Set aside.
  2. Combine egg whites, milk, flour, salt, mustard and Italian seasoning. Set aside.
  3. Place remaining ingredients evenly in crust, in order listed. Pour egg mixture over ingredients.
  4. Bake at 350 degrees F about 45 minutes or until center is set. Let cool 10 minutes before serving.
