Champinones a la Sevillana (Seville-Style Mushrooms) Recipe

  • 2/3 cup olive oil
  • 1 tablespoon crushed fresh garlic
  • 1 pinch dried parsley
  • 8 mushrooms, stemmed and sliced
  • 2 slices Parma ham
  • 1 loaf crusty bread, cut into chunks
  1. Mix olive oil, garlic, and parsley together in a bowl.
  2. Divide mushrooms between two 4-inch round clay dishes that are safe for stovetop use. Ladle olive oil mixture over mushrooms.
  3. Cook over medium-high heat, stirring frequently with a small spoon, until oil starts to bubble, 3 to 5 minutes. Remove from heat carefully.
  4. Tear up parma ham and scatter over mushrooms. Serve with bread.
