- 5 cups cauliflower florets
- 1/2 cup roasted red peppers, cut into 1-inch strips
- 1 tablespoon Safeway SELECT Capers, drained
- 4 canned anchovies, patted dry and chopped
- 2 tablespoons lemon juice
- 1 tablespoon Safeway SELECT Extra-Virgin Olive Oil
- Salt and freshly ground pepper
- In a covered 2- to 3-quart pan over high heat, bring cauliflower and 1/2 cup water to a boil. Reduce heat and simmer until tender-crisp to bite, about 4 minutes. Drain.
- Combine peppers, capers, anchovies, lemon juice, and oil. Mix with cauliflower; season to taste with salt and pepper.
