- 150g/5½oz carrot, finely sliced
- 1 tsp chopped fresh parsley
- 1 tsp chopped fresh chives
- 1 tbsp olive oil
- 50g/2oz Parma ham
- salt and freshly ground black pepper
- Place the carrots, herbs and oil into a bowl. Season, to taste, with salt and freshly ground black pepper and mix well.
- To serve, place the Parma ham flat onto a plate and arrange the carrot and herb salad on top.
