Cancer-Fighting Topping – Shredded Carrot Raita Recipe

  • 2 tablespoons raisins
  • 1 1/2 cups low-fat plain yogurt
  • 1/2 teaspoon sugar
  • 1/4 teaspoon ground cayenne or red pepper
  • 1/4 teaspoon salt
  • 1 tablespoon finely chopped fresh mint leaves, divided
  • 2 cups grated carrots
  • 6 walnut halves, coarsely chopped
  1. Cover raisins with warm water in small bowl and soak at least 30 minutes or up to overnight.
  2. Whisk together yogurt, sugar, salt, cayenne (to taste), and 1/2 tablespoon of the mint in medium bowl. Add a few teaspoons of water if too thick.
  3. Drain raisins and add to yogurt dressing along with carrots and walnuts. Stir well and sprinkle with the remaining 1/2 tablespoon mint.
