- 2 (15 ounce) cans black-eyed peas, drained and rinsed
- 2 cups frozen corn kernels, cooked and drained
- 3 celery sticks, sliced
- 1 small red onion, chopped
- 1 green bell pepper, seeded and diced
- 7 ounces smoked ham, cut into 1/2-inch chunks
- Fresh cilantro sprigs
- Cajun Dressing
- 2/3 cup sour cream
- 1 tablespoon tomato ketchup
- 1/2 cup finely chopped fresh cilantro
- 1 1/2 teaspoons Cajun seasoning
- Tabasco sauce
- Salt and fresh-ground pepper
- To make the dressing, put the sour cream, ketchup, cilantro, Cajun seasoning, 2 dashes of Tabasco sauce, and salt and pepper to taste in a large bowl. Whisk together, then taste and add more Tabasco sauce, if liked.
- Add the beans, corn, celery, red onion, green bell pepper, and ham to the bowl, and stir until everything is well mixed. Garnish with sprigs of cilantro and serve at once.
