Cactus Salad (Ensalada de Nopales) Recipe

  • 2 (16 ounce) jars cactus
  • 1 diced tomato
  • 4 teaspoons chopped cilantro
  • 1/2 onion, diced
  • 2 tablespoons vinegar
  • 1/2 cup shredded cotija cheese
  • 1 avocado, diced
  • 5 pickled Serrano peppers, sliced (optional)
  • Salt, to taste
  • Oregano, to taste
  1. Mix drained cactus, tomatoes, cilantro, onion, vinegar, avocado and peppers. Add salt and oregano to taste, sprinkle with Cotija cheese and serve.
