Butter Meltaways Recipe
- 1/2 cup butter (no substitutes), softened
- 1/2 cup vegetable oil
- 1/2 cup sugar
- 1/2 cup confectioners' sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon cream of tartar
- Additional sugar
- In a mixing bowl, cream butter, oil and sugars. Add egg and vanilla. Combine flour, baking soda and cream of tartar; gradually add to the creamed mixture. Chill for several hours or overnight.
- Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Flatten with a fork dipped in flour; sprinkle with sugar. Bake at 350 degrees F for 13-15 minutes or until lightly browned. Cool on wire racks.
