- 1 tablespoon olive oil
- 3/4 cup finely chopped onion
- 1/2 cup finely chopped green pepper
- 1 cup diced tomatoes
- 1 (15 ounce) can BUSH'S® Black Beans, drain and reserve juices
- 1/2 teaspoon thyme
- 1 teaspoon garlic salt
- 3 tablespoons cider vinegar
- 1/2 teaspoon hot pepper sauce
- 2 cups cooked rice
- Lime wedges (optional)
- In large skillet heat olive oil; cook onion and green pepper until crisp tender; stir in tomatoes, beans, thyme and garlic salt, cook 3 minutes; add vinegar, pepper sauce, and reserved juices continue to cook 5 minutes.
- Serve over rice. Garnish with lime wedge (optional).
