- 3/4 cup boiling water
- 1/2 cup fine bulgur
- 1/2 teaspoon salt
- 2 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- coarse salt to taste
- 3/4 cup halved seedless grapes
- 1/2 cup crumbled feta cheese
- 2 tablespoons chopped scallions
- Combine boiling water, bulgur, and salt in a bowl. Cover and let stand until bulgur absorbs water and softens, about 30 minutes.
- Whisk lemon juice, olive oil, and coarse salt together in a large bowl. Mix in grapes, feta cheese, and scallions. Add bulgur; toss to distribute evenly.
