Bulgur with Feta and Grapes Recipe

  • 3/4 cup boiling water
  • 1/2 cup fine bulgur
  • 1/2 teaspoon salt
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • coarse salt to taste
  • 3/4 cup halved seedless grapes
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons chopped scallions
  1. Combine boiling water, bulgur, and salt in a bowl. Cover and let stand until bulgur absorbs water and softens, about 30 minutes.
  2. Whisk lemon juice, olive oil, and coarse salt together in a large bowl. Mix in grapes, feta cheese, and scallions. Add bulgur; toss to distribute evenly.
