Bruschetta with Herbed Tomato Salad Recipe

  • For herbed tomato salad:
  • 2 large ripe tomatoes, cut into 1/4 inch dice
  • 1 small sweet onion, cut into 1/4 inch dice
  • 1 green bell pepper, cut into 1/4 inch dice
  • 1 teaspoon minced garlic
  • 3 tablespoons minced fresh herbs
  • 2 tablespoons red wine vinegar
  • 3 fluid ounces extra virgin olive oil
  • Salt and pepper, to taste
  • 4 slices crusty Italian or French bread, toasted
  • 2 cloves garlic, cut in half lengthwise
  • Extra virgin olive oil
  1. Make the herbed tomato salad: Combine all ingredients and refrigerate for 30 minutes to mix flavors.
  2. Rub one side of the toasted bread with a cut side of garlic.
  3. Drizzle or brush on just enough olive oil to coat the top.
  4. Spoon the tomato relish onto the toasted bread and serve.
