- For herbed tomato salad:
- 2 large ripe tomatoes, cut into 1/4 inch dice
- 1 small sweet onion, cut into 1/4 inch dice
- 1 green bell pepper, cut into 1/4 inch dice
- 1 teaspoon minced garlic
- 3 tablespoons minced fresh herbs
- 2 tablespoons red wine vinegar
- 3 fluid ounces extra virgin olive oil
- Salt and pepper, to taste
- 4 slices crusty Italian or French bread, toasted
- 2 cloves garlic, cut in half lengthwise
- Extra virgin olive oil
- Make the herbed tomato salad: Combine all ingredients and refrigerate for 30 minutes to mix flavors.
- Rub one side of the toasted bread with a cut side of garlic.
- Drizzle or brush on just enough olive oil to coat the top.
- Spoon the tomato relish onto the toasted bread and serve.
