Broccoli & Turkey Soup Recipe

  • 1 pound broccoli, chopped
  • 1 pound cooked turkey, diced
  • 1/2 yellow onion, minced
  • 2 tablespoons olive oil
  • 4 cups chicken stock or turkey stock
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh oregano
  • 1/4 teaspoon pepper
  • salt as needed
  1. In a large soup pot, heat the oil over medium-high heat and add the onions. Saute for a minute or two until they start to become translucent. Add the broccoli and saute for about 2 minutes more.
  2. Add the stock and bring to a slow boil. If your herbs are dried, add them now. Cook for about 10 minutes
  3. Add the turkey. If your herbs are fresh, then add them now. Cook for another 5 minutes. Serve.
