- 1 pound broccoli, chopped
- 1 pound cooked turkey, diced
- 1/2 yellow onion, minced
- 2 tablespoons olive oil
- 4 cups chicken stock or turkey stock
- 1 teaspoon fresh thyme
- 1 teaspoon fresh oregano
- 1/4 teaspoon pepper
- salt as needed
- In a large soup pot, heat the oil over medium-high heat and add the onions. Saute for a minute or two until they start to become translucent. Add the broccoli and saute for about 2 minutes more.
- Add the stock and bring to a slow boil. If your herbs are dried, add them now. Cook for about 10 minutes
- Add the turkey. If your herbs are fresh, then add them now. Cook for another 5 minutes. Serve.
