- 1 pound Archer Farms® bratwurst, cut into 3/4-inch slices
- 2 medium potatoes, cut into 1-inch cubes
- 1 medium sweet potato, cut into 1-inch cubes
- 4 carrots, cut into 2-inch lengths
- 1 small onion, cut into wedges
- 4 cloves garlic cloves (used whole, not chopped or minced)
- 2 tablespoons Archer Farms olive oil
- Heat oven to 425 degrees F. Place all ingredients on 15×10 baking pan with sides. Toss to coat with the oil. Season lightly with salt and pepper.
- Cover pan tightly with foil. Roast 30 minutes. Remove foil and stir; roast an additional 30 minutes or until bratwurst are hot and vegetables are tender. Enjoy with your favorite Archer Farms mustard on the side.
