Bratwurst with Roasted Root Vegetables Recipe

  • 1 pound Archer Farms® bratwurst, cut into 3/4-inch slices
  • 2 medium potatoes, cut into 1-inch cubes
  • 1 medium sweet potato, cut into 1-inch cubes
  • 4 carrots, cut into 2-inch lengths
  • 1 small onion, cut into wedges
  • 4 cloves garlic cloves (used whole, not chopped or minced)
  • 2 tablespoons Archer Farms olive oil
  1. Heat oven to 425 degrees F. Place all ingredients on 15×10 baking pan with sides. Toss to coat with the oil. Season lightly with salt and pepper.
  2. Cover pan tightly with foil. Roast 30 minutes. Remove foil and stir; roast an additional 30 minutes or until bratwurst are hot and vegetables are tender. Enjoy with your favorite Archer Farms mustard on the side.
