Bran-Wheat Waffles with Date-Nut Butter Recipe

  • 2/3 cup O Organics all-purpose flour
  • 2/3 cup whole-wheat flour
  • 3/4 cup unprocessed bran
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 O Organics Large Brown Eggs, separated
  • 1/4 cup firmly packed brown O Organics sugar
  • 1 1/2 cups O Organics Whole Milk
  • 1/3 cup Lucerne® Sweet Cream Butter, melted and cooled
  • Date-Nut Butter (optional)
  • 1/2 cup softened Lucerne® Sweet Cream Butter
  • 3 tablespoons powdered O Organics sugar
  • 3 tablespoons finely chopped pitted dates
  • 1/4 cup finely chopped pecans or walnuts
  1. In a large bowl, stir together all-purpose flour and whole-wheat flour, bran, baking powder, and salt.
  2. In a medium bowl, lightly beat egg yolks and sugar; stir in milk and butter. Stir yolk mixture into flour mixture just until moistened; do not beat.
  3. In a small bowl, beat egg whites just until stiff, moist peaks form; fold gently into batter. Bake waffles in a preheated waffle iron according to manufacturers directions.
  4. Meanwhile, if making date-nut butter, in a small bowl, beat butter, powdered sugar, dates, and pecans together until fluffy.
  5. Serve waffles hot with prepared butter, if desired, or cool on wire racks, package airtight, and freeze. To serve, heat waffles, unthawed, in toaster or toaster oven until crisp and hot.
