BOCA® Sausage, Barley and Bean Soup Recipe

  • 1 (10 ounce) package frozen BOCA Meatless Smoked Sausage
  • 4 cups water
  • 1 (15.5 ounce) can great Northern beans, drained, rinsed
  • 1 (14.5 ounce) can stewed tomatoes
  • 1 medium onion, chopped
  • 2 stalks celery, sliced
  • 2 medium carrots, sliced
  • 1/2 cup quick-cooking barley
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon dried basil leaves
  • Hot pepper sauce (optional)
  1. CUT sausage into 1/4-inch-thick slices.
  2. PLACE sausage and all remaining ingredients except hot pepper sauce in Dutch oven or large saucepan. Bring to boil; cover.
  3. REDUCE heat to medium-low; simmer 15 minutes or until vegetables are tender. Season to taste with hot pepper sauce.
