Blue cheese bruschetta with apple chutney Recipe

  • 25g/1oz butter
  • 25g/1oz brown sugar
  • 1 apple, peeled, cored and cut into six pieces
  • 4 slices French bread
  • 110g/4oz blue cheese, cut into four pieces
  • 1 tsp fresh dill, chopped, to serve
  1. Preheat the grill to its highest setting.
  2. Place the butter and sugar into a saucepan over a high heat and cook until melted.
  3. Add the apples and cook for five to ten minutes, until caramelised and cooked through.
  4. Heat a griddle pan until smoking and cook the slices of bread for one minute on each side. Cover with the blue cheese and place under the grill for 1-2 minutes, or until melted.
  5. Spoon over the apples and the sprinkle with the dill to serve.
