- 110g/4oz butter
- 110g/4oz caster sugar
- 110g/4oz self-raising flour
- 2 eggs
- splash of milk
- 55g/2oz blackberries
- 55g/2oz blackberries
- 30g/1oz caster sugar
- splash of red wine
- Blend the butter and caster sugar together in a food processor. Add the flour, eggs and milk and blend lightly to combine.
- Add the blackberries and blend on “high” to combine.
- Grease a small pudding dish and pour the sponge mixture in. Cover with cling film and microwave on full power for four minutes.
- To make the sauce, heat the blackberries, sugar and wine in a small pan for 3-4 minutes.
- Turn the pudding out onto a serving plate and spoon the sauce over to serve.
