- 2 cups pitted kalamata olives, or French green olives
- 2 tablespoons capers, drained
- 4 cloves Roasted Garlic
- 4 anchovy fillets
- ¼ cup extra virgin olive oil
- Freshly ground black pepper, to taste
- Combine all the ingredients in a blender or food processor. Blend on low until the mixture is smooth. If using a blender, stop occasionally and stir the mixture. When the mixture is almost blended, pulse to achieve a smooth consistency.
