Berry and Sugar-Cookie Pizza Recipe

  • 6 1/2 ounces prepared sugar cookie dough
  • 1 (8 ounce) package fat-free cream cheese
  • 1/3 cup powdered (icing) sugar
  • 1/4 teaspoon almond extract
  • 1 cup strawberries
  • 1 cup raspberries
  • 1 cup blueberries
  • 1 tablespoon granulated sugar
  1. Preheat oven to 350 degrees F (180 degrees C).
  2. To Make Crust: Between well-floured pieces of waxed paper, roll dough into a circle slightly larger than 9 inches (23 cm). Trim to a perfect 9-inch (23-cm) circle. Transfer to a nonstick cookie sheet. Bake until lightly browned, 10 to 12 minutes. Cool completely on sheet.

  4. If desired, roll out dough from trimmings and cut into stars. Bake until lightly browned, 8 to 10 minutes. Cool and reserve for decorating pizza.
  5. To Make Frosting: Combine cream cheese, powdered (icing) sugar, and almond extract; whip until smooth.
  6. To Assemble Pizza: Just before serving, spread frosting on cookie crust. Arrange strawberries around outer edge and raspberries in center. Arrange blueberries between strawberries and raspberries. Garnish with granulated sugar and star cookies.
