Beef Enchilada Casserole Recipe

  • 2 tablespoons Archer Farms™ ground cumin
  • 1 (24 ounce) jar Archer Farms™ three-bean salsa
  • 1 (15 ounce) can tomato sauce
  • 1 (32 ounce) package ground round beef
  • 1 1/2 cups frozen diced onions
  • 1 (16 ounce) bag Archer Farms™ chili lime tortilla chips, coarsely crumbled
  • 1 (8 ounce) package shredded mild Cheddar cheese
  1. Heat oven to 350 degrees F. Spray 13×9-inch glass baking dish with cooking spray. Mix cumin, salsa and tomato sauce in medium bowl; reserve 1 1/2 cups.
  2. Cook beef in 12-inch skillet over medium heat about 5 minutes, stirring occasionally, until browned. Stir in onions and cook an additional 3 minutes; drain if needed. Stir in salsa mixture; remove from heat.
  3. Place 1/3 of tortilla chips in bottom of baking dish. Spoon half of beef mixture over chips. Cover with 1/3 of chips and 1/2 the cheese. Spoon on remaining beef mixture; cover with remaining chips. Top with 1 1/2 cups reserved salsa mixture and remaining 1/2 of cheese. Spray sheet of foil with cooking spray. Cover dish with foil sprayed side down.
  4. Bake casserole about 50 minutes or until center is hot.
