Beef and Pine Nut Pilaf Recipe

  • 1 tablespoon Safeway SELECT Olive Oil
  • 1 pound lean ground beef
  • 1/4 cup finely chopped yellow onion
  • 1 clove garlic, minced
  • 1 1/4 cups basmati rice
  • 1/2 cup pine nuts
  • 2 1/2 cups canned beef broth
  • 1/2 cup chopped dried apricots
  • 1 teaspoon ground cinnamon
  • 1/4 cup chopped fresh parsley
  • Salt
  1. Add oil in a 10 to 12-inch frying pan over medium-high heat.
  2. Add ground beef, onions, and garlic and heat until meat is cooked through and browned, about 5 to 7 minutes.
  3. Drain any excess fat and stir in rice and pine nuts; cook, stirring often, until rice and pine nuts are pale golden (4 to 5 minutes).
  4. Add broth, apricots, and cinnamon. Increase heat to high and bring mixture to a boil. Then reduce heat, cover, and simmer, stirring occasionally, until rice is tender to bite (about 15 minutes).
  5. Stir in parsley.
  6. Season to taste with salt.
