Beans-on-Fritos Pie Recipe

  • 1 1/2 (14 ounce) cans barbecue baked beans
  • 1 pound extra-lean ground beef
  • 1 (8 ounce) can diced tomatoes
  • 1 (8 ounce) package corn chips
  • 1 cup finely shredded lettuce
  • 1 1/2 cups shredded, low-fat Cheddar cheese
  1. Brown the beef and then drain the grease. Stir in the tomatoes and 1-1/2 cans of beans. Simmer 20 minutes. Layer crushed corn chips on the bottom of a serving dish. Top with the beef mixture, lettuce, and cheese.
