Bean and Cheese Burrito Recipe

  • 1 12-inch fat-free flour tortilla
  • 1/3 cup canned black beans, mashed
  • 1/4 cup spicy salsa
  • 1/4 cup shredded reduced-fat Cheddar cheese
  • 1 tablespoon sliced green onions
  • 1 tablespoon sliced, pitted ripe olives
  • 2 tablespoons diced tomatoes
  • 1/2 cup thinly sliced romaine lettuce
  • 2 tablespoons fat-free sour cream
  1. Preheat the oven to 350 degrees F.
  2. Mix the beans, half of the salsa, cheese, onion, and tomato in a small bowl. Place the tortilla on a large piece of aluminum foil. Spoon the bean mixture in the middle of the tortilla, but slightly off-center. Fold the tortilla. Wrap the foil around the burrito and bake for 10 to 15 minutes or until hot. Top with lettuce, remaining salsa, and sour cream.
