- 1/4 cup cooked, shredded chicken
- 2 tablespoons barbecue sauce
- 2 teaspoons thinly sliced red onion
- 2 Quaker® Lightly Salted or Salt Free Rice Cakes
- 1 tablespoon low fat shredded sharp cheddar cheese
- 1 teaspoon chopped fresh cilantro
- Combine chicken, barbecue sauce and red onion in small microwave-safe bowl; mix well. Microwave on HIGH (100% power) for 30 seconds, or until heated through.
- Divide mixture evenly between Lightly Salted Rice Cakes.
- Sprinkle with cheese and cilantro.
