Basmati Rice with Mustard Seeds and Golden Raisins Recipe

  • 2 2/3 cups water
  • 1 1/3 cups Texmati rice (American basmati) or brown basmati rice
  • 1/4 cup golden raisins
  • 1 cinnamon stick
  • 1 teaspoon mustard seeds
  • 3/4 teaspoon salt
  • 1/2 cup thinly sliced scallion greens
  • available at specialty foods shops and some supermarkets
  • available at Indian markets, natural foods stores, and some specialty foods shops
  1. In a 3-quart heavy saucepan stir together all ingredients except scallion and bring to a boil. Reduce heat to low and cook, covered, until rice is tender and liquid is absorbed, about 20 minutes. Fluff rice with a fork and stir in scallion.
