Basil Pesto – Cooking School Recipe

  • 4 cloves garlic, peeled
  • 3 cups packed fresh basil leaves
  • 1/4 cup toasted pine nuts
  • 1/2 cup olive oil
  • 3/4 cup grated Parmesan cheese
  1. Turn food processor on high, and drop garlic cloves in through the feed tube. Blend until finely minced. Turn food processor off, add basil and pulse until roughly chopped. Drop pine nuts into food processor and pulse until finely chopped. Scrape down the sides of the food processor bowl with a spatula.
  2. Slowly pour olive oil into the basil mixture while the food processor is running. Transfer pesto to a bowl.
  3. Stir Parmesan cheese into the pesto.
