- 1 medium ripe mango, peeled and cubed
- 2 tablespoons sugar
- 1 cup fat-free ricotta cheese
- 1 large banana, thinly sliced
- 1 1/2 tablespoons mint leaves
- Puree mango and sugar in food processor or blender until smooth.
- Spoon 2 tablespoons of ricotta into 3 parfait glasses. Top with banana slices, a few spoonfuls of mango sauce, and 1/2 teaspoon of mint. Top with cheese, banana slices, mango sauce, and mint.
- Repeat one more time.
