- 1 1/2 cups all-purpose flour
- 1/2 cup wheat bran
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/2 cup semi-sweet chocolate chips, or more to taste
- 1 large egg
- 3/4 cup packed light brown sugar
- 1 1/3 cups mashed ripe bananas
- 1/3 cup Melt® Organic Buttery Spread
- 1 teaspoon vanilla
- Preheat oven to 375. Use standard muffin cups, either greased or with liners.
- Whisk together the flour, what bran, baking powder, baking soda, salt, cinnamon and nutmeg.
- Stir in the semi-sweet chocolate chips.
- In another large bowl whisk together the egg, brown sugar, ripe bananas, Melt(R) and vanilla.
- Add the dry mix to the wet mix and fold until just blended. Batter will be lumpy.
- Spoon into lined muffin tins.
- Bake 14-16 minutes or until toothpick inserted into 2 muffins comes out dry.
- Eat immediately or cool on wire racks.
