Banana Chocolate Chip Muffins by Melt® Buttery Spread Recipe

  • 1 1/2 cups all-purpose flour
  • 1/2 cup wheat bran
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/2 cup semi-sweet chocolate chips, or more to taste
  • 1 large egg
  • 3/4 cup packed light brown sugar
  • 1 1/3 cups mashed ripe bananas
  • 1/3 cup Melt® Organic Buttery Spread
  • 1 teaspoon vanilla
  1. Preheat oven to 375. Use standard muffin cups, either greased or with liners.
  2. Whisk together the flour, what bran, baking powder, baking soda, salt, cinnamon and nutmeg.
  3. Stir in the semi-sweet chocolate chips.
  4. In another large bowl whisk together the egg, brown sugar, ripe bananas, Melt(R) and vanilla.
  5. Add the dry mix to the wet mix and fold until just blended. Batter will be lumpy.
  6. Spoon into lined muffin tins.
  7. Bake 14-16 minutes or until toothpick inserted into 2 muffins comes out dry.
  8. Eat immediately or cool on wire racks.
  9. Enjoy with additional dollop of Rich & Creamy Melt(R)!
