- 1/2 cup pesto
- 3 tablespoons fresh lemon juice
- 1 carrot, finely chopped
- 1 leek, chopped
- 2 pounds drawn rockfish
- Heat oven to 375 . Grease rectangular baking dish, 13x9x2 inches.
- Mix pesto, lemon juice, carrot and leek. Place fish in dish. Spread vegetable mixture over fish.
- Cover and bake about 40 minutes or until fish flakes easily with fork.
