Baked Lemon Pudding Recipe

  • 1/3 cup white sugar
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 2 eggs, separated
  • 1 cup milk
  • 3 tablespoons lemon juice
  • 2 tablespoons butter or margarine, melted
  • 1 1/2 teaspoons grated lemon peel
  • confectioners' sugar
  1. In a mixing bowl, combine 1/3 cup sugar, baking powder, and salt. In another mixing bowl, beat egg yolks; add milk, lemon juice, butter, and lemon peel. Add to the dry ingredients; mix well. Beat egg whites until soft peaks form; gradually add remaining sugar, beating until stiff peaks form. Fold into lemon mixture.
  2. Pour into a lightly greased 1-1/2-qt. baking dish. Place in a large baking pan. Add 1 in. of hot water to larger pan. Bake, uncovered, at 350 degrees F for 45-50 minutes or until lightly browned. Serve warm or chilled. Dust with confectioners' sugar if desired.
