Baja Bean Dip Recipe
- 1 pound ground beef or turkey
- 1 (28 ounce) can S&W;® Petite-Cut™ Diced Tomatoes, drained
- 2 tablespoons canned chipotle pepper in adobo sauce, or jalapeno peppers, chopped
- 1 (17 ounce) can refried beans
- 1 (15.25 ounce) can S&W;® Whole Kernel Corn, drained
- 2 tablespoons chili powder
- 2 cups Cheddar cheese, shredded
- 1 package Tortilla chips
- Cook meat in skillet; drain.
- Reserve 1 cup tomatoes; set aside. Add remaining tomatoes, peppers, refried beans, 1/2 the corn, and chili powder. Cook over medium heat, stirring occasionally, until hot.
- Spoon into shallow 2-1/2-quart baking dish. Top with remaining corn, reserved tomatoes and cheese. Bake at 350 degrees F, 5 minutes, or until cheese is melted. Garnish with green onions and cilantro, if desired. Serve warm with tortilla chips.
