Bacon sandwich Recipe

  • 2 tbsp olive oil
  • 2 slices crusty white bread
  • 2 slices prosciutto
  • 2 tomatoes, halved
  • salt and freshly ground black pepper
  • olive oil, to drizzle
  1. Drizzle the olive oil over the bread. Heat a griddle pan until hot, add the bread slices and griddle for two minutes on each side.
  2. Remove from the pan and then griddle the prosciutto until crispy. Remove.
  3. Add the tomatoes to the grill pan and cook until soft.
  4. To serve, put the prosciutto onto one slice of griddled bread, top with the tomatoes, season well with salt and freshly ground black pepper, drizzle with olive oil and place the other griddled slice of bread on top.
