Avocado with Sesame Soy Dressing Recipe

  • 1 tablespoon soy sauce
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon Asian sesame oil
  • 1/8 teaspoon sugar
  • 1 chilled firm-ripe California avocado
  • 4 to 6 leaves soft-leafed lettuce, washed and spun dry
  • 1 teaspoon sesame seeds, toasted lightly
  1. In a small bowl whisk together soy sauce, lemon juice, oil, sugar, and a pinch of salt until sugar is dissolved.
  2. Quarter, pit, and peel avocado and cut crosswise into 1/2-inch slices. Add avocado to dressing and turn gently with a rubber spatula to coat.
  3. Line 2 plates with lettuce and divide avocado and dressing between them. Sprinkle sesame seeds over avocado.
