- 1 baguette, cut into 1/4 inch slices
- Olive oil cooking spray
- 1 large Roma tomato, chopped into 1/4 inch cubes
- 4 fresh basil leaves, thinly sliced
- 1 ripe Hass avocado peeled, pitted and chopped into 1/4 inch cubes
- 1 garlic clove, finely chopped
- 1 tablespoon olive oil
- 1 tablespoon white balsamic vinegar
- Place baguette slices on cookie sheets and spray with olive oil cooking spray. Toast in 350 degrees F oven for about 8 minutes or until lightly browned. Remove, cool and set aside.
- In bowl gently mix tomatoes, basil, avocado, garlic, oil and balsamic vinegar.
- Spoon avocado mixture onto toasted baguette slices.
