Avocado Bruschetta Recipe

  • 1 baguette, cut into 1/4 inch slices
  • Olive oil cooking spray
  • 1 large Roma tomato, chopped into 1/4 inch cubes
  • 4 fresh basil leaves, thinly sliced
  • 1 ripe Hass avocado peeled, pitted and chopped into 1/4 inch cubes
  • 1 garlic clove, finely chopped
  • 1 tablespoon olive oil
  • 1 tablespoon white balsamic vinegar
  1. Place baguette slices on cookie sheets and spray with olive oil cooking spray. Toast in 350 degrees F oven for about 8 minutes or until lightly browned. Remove, cool and set aside.
  2. In bowl gently mix tomatoes, basil, avocado, garlic, oil and balsamic vinegar.
  3. Spoon avocado mixture onto toasted baguette slices.
