- 2 tablespoons olive oil
- 1/2 cup finely chopped onion
- 2 cups low-sodium chicken broth
- 1 1/2 cups fat free milk
- 1 1/2 cups canned pumpkin
- 2 tablespoons brown sugar
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
- 1 teaspoon lemon juice
- Heat olive oil in a 2 1/2 quart saucepan. Add onion and cook for about 2 minutes.
- Add chicken broth, LACTAID(R) Fat Free Milk, pumpkin, sugar, salt and nutmeg and bring to a boil, and simmer for 15 minutes.
- Add lemon juice and serve while warm.
