Autumn Pumpkin Soup Recipe

  • 2 tablespoons olive oil
  • 1/2 cup finely chopped onion
  • 2 cups low-sodium chicken broth
  • 1 1/2 cups fat free milk
  • 1 1/2 cups canned pumpkin
  • 2 tablespoons brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1 teaspoon lemon juice
  1. Heat olive oil in a 2 1/2 quart saucepan. Add onion and cook for about 2 minutes.
  2. Add chicken broth, LACTAID(R) Fat Free Milk, pumpkin, sugar, salt and nutmeg and bring to a boil, and simmer for 15 minutes.
  3. Add lemon juice and serve while warm.
