- 2 large Golden Delicious apples, cored and chopped
- 1 small head radicchio, chopped
- 2 Belgian endives, chopped
- 1 cup chopped arugula
- 1/8 cup thinly sliced red onion
- 2 tablespoons extra virgin olive oil
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons apple cider vinegar
- 1 clove garlic, minced
- 1/4 teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper
- 2 ounces Roquefort cheese, crumbled
- 2 tablespoons chopped walnuts, toasted
- Mix together apples, radicchio, endive, arugula, and onion in large bowl.
- Whisk together oil, lemon juice, vinegar, garlic, salt, and pepper in small bowl.
- Toss with apple mixture, Roquefort, and walnuts.
