- 2 cups all-purpose flour
- 1 cup rye flour
- 1 tablespoon baking powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon caraway seeds
- 1 teaspoon anise seeds
- 2 cups low-fat yogurt
- 2 eggs
- 1 cup unsweetened applesauce
- 1/2 cup light molasses
- 1 teaspoon orange flavoring
- 1 cup All-Bran® Original
- Stir together flour, rye flour, baking powder, soda, salt, caraway seeds and anise seeds. Set aside.
- In large mixing bowl combine yogurt, eggs, applesauce, molasses and orange flavoring. Beat well. Add Kellogg's(R) All-Bran(R) cereal. Let stand 2 minutes or until cereal softens. Add flour mixture, stirring only until combined. Portion batter evenly into two 8 1/2×4 1/2×2 1/2-inch loaf pans coated with cooking spray.
- Bake at 350 degrees F about 50 minutes or until wooden pick comes out clean. Let cool 10 minutes and remove from pan. Cool on wire rack. Wrap in plastic wrap.
