- 3 teaspoons Archer Farms™ Mediterranean cooking oil
- 1/2 teaspoon Archer Farms™ organic rosemary, crushed
- 2 tablespoons chopped roasted red bell pepper
- 1 (16 ounce) package diced redskin potatoes
- 2 tablespoons shredded mozzarella
- Heat oil in medium skillet over medium heat. Add rosemary and roasted peppers; cook and stir 30 seconds.
- Add potatoes; toss to coat. Spread potatoes evenly in pan. Cook potatoes 2 minutes. Turn potatoes, using turner, and cook an additional 2 minutes. Sprinkle with cheese.
